My purpose

Dinner time in our family has always been an important time for all five us to sit together an unwind with some great food and wonderful company. Since the start of our relationship Chad and I have always enjoyed spending time together in the kitchen. Chad has a great passion and talent for food, and he has definitely passed on his love of cooking to me. Some of my favorite memories are around the table. For the next year our challenge is to write on here each night about our dinner experiences, and of course the recipes. When the year is all said and done our hope is to turn the blog into a keepsake book for each one of our children. I hope they always remember the importance of eating dinner as a family.

June 21st!!

The Menu

Pork Chops, portabella mushrooms with

Spent the afternoon swimming at Grandma's pool, having a great time. Our time was cut short by a phone call from Chad. His car was still not fixed so we had rush to pick him. Any how we ended up getting home a lot later than anticipated, so Chad and worked together to get dinner on the table as quickly as possible. We ended up with a great healthy and light meal that we all enjoyed!!



The Recipe

Pork Chops

Salt an pepper pork chops, add 2-3 Tbs of olive oil to skillet and pan fry for about 10-12 minutes.


Portabella mushrooms with mozzarella and tomatoes

Cut the stem and veins of the mushrooms. Cut up any type of tomatoes and shred mozzarella. Top mushrooms with tomatoes and mozzarella, drizzle with olive oil. Salt and Pepper.

June 20th

Today was eventful. Chad's car broke down on his way to work. So I had to pick him up tonight. Good news is that it was easily fixable! I also had to pick my sister up and we had plans to watch her play basketball. So tonight we went out for dinner. We ate at this little cafe called Magnolia Diner. Food was ok at best, service was good. We had a really nice visit with my parents and sister.

Eggs, sausage, and cheese croissants


I hope all the dads out there had a wonderful fathers day. I know my guy did!! I let him sleep in so the kids and I could make breakfast. We were not home for dinner so I thought I would share our breakfast.


The Recipe

6-8 scrambled egg, jimmy dean sausage, cheddar cheese, and Pillsbury croissants

Mix 6-8 eggs in a bowl, salt and pepper, ground the sausage in a skillet till cooked, add the eggs to the sausage and cook until eggs are scrambled. open the croissants, and peel them a part as directed. on the flat dough add some egg and sausage mixture, and cheese roll the croissant. Repeat until all the croissants are filled. Bake @325for 10-12 minutes.

Tonight we decided to make up for our backyard bbq a few weekends ago. We had a little fire in our fire table and helped the kids roast sausages and later marshmallows. The kids played in the water all evening and we had a blast hanging in the backyard! Later that night we came in and built a fort in the living room and all fell asleep watching land before time.

We had a full day of Running errands and skipped the much needed grocery shopping. Needless to say by the time we got home I was in no mood to go to the store and then come home cook, eat, and clean. So we called our local Chineese Restaurant. The food wasn't anything to speak about and we most likely will not be ordering from the double dragon again.

Tonight Christian had an evening game and Kaylee had her first ever sleep over at a friends house. It was very quiet without Kaylee tonight. It is amazing how missing one person makes such a big difference. She had a blast at her friends house though! For dinner Chad cooked his spaghetti

The Recipe

Spaghetti, hunts sauce, hunts paste, and Italian sausage.


in a bowl mix the sauce and paste together season to taste with basil, rosemary, oregano, and salt and pepper set aside. In a lrg skillet saute cut up sausage and garlic until no longer pink, add sauce. Cook until hot. Cook spaghetti noodles according to package. Serve with sauce and Enjoy!

Last Night

I hate to admit it but I used boxed potatoes and stove top dressing. I try not to use boxed foods at all but they come in handy when I am running behind. Around the table we always ask the kids questions about their day or other general questions. I am trying to teach them how to engage in conversation. Last night Kaylee asked her brother, What he likes best about summer so far? He gave the best answer a mother could hear, 'Spending time with my family'. I hope he always feels that way!

Lemon Pepper Chicken

1pkg legs and thighs, Mrs. Dash lemon pepper season, 2 lg lemons

Wash chicken thoroughly, cover the chicken in seasoning and lemon juice. Put chicken in a 9x13 baking pan bake @400 for 45 minutes or till juices are clear

Tuesday night the kids requested breakfast dinner. It was Christian's night to be the sous chef. Like I said Monday I involve the kids as much as possible in the prep and cooking process. Our children are more willing to try new foods when they help prepare dinner. The kids definitely take pride in what they cook! Our family loves breakfast food however none of us are big morning eaters, so once in awhile we have it for dinner.

A Great Day

Tonight's dinner was wonderful! It was nice to all be home together and enjoying some great food. The kids and I rested around the house all day today as Jaxson is still recovering. We will most likely lay low for the week. Since last week turned into a fast food week, we were all craving some good home cooked food. All three kids love meatloaf, so dinner tonight was a no brainer. Tonight Kaylee was my sous chef. I try to involve the kids as much as possible while cooking. After dinner tonight we headed outdoors where Chad and the kids played ball. What a great start to our week!


The Recipe

Mommy's Meatloaf

Ground beef (93/7), smoked paprika, salt and pepper, About 2 Tbs of ketchup, bbq sauce, mustard, and worcestershire sauce, 1/4 cup parmesan, 1 egg and 10 ritz crackers. In a large bowl combine all ingredients mix well. Transfer meat into an 9x9 pan even out. Turn oven to 400 degrees bake for 35 minutes or until no longer pink.


Baked Potatoes

Heat oven to 400, drizzle olive oil and sprinkle salt on potatoes, wrap in foil. Bake for 1 hour


Last Week

I know I said I would be on here every night commenting on our dinner experiences. I started out strong then seemed to fizzle out. I promise I had a good reason. Tuesday afternoon Jaxson seemed to be getting sicker, he stopped eating and drinking and became really pale. We took him to the doctor who transferred him to the hospital via ambulance. Turns out he developed a large patch of pneumonia on his left lung. His oxygen levels were low and it was very scary for a few days. He responded well to treatment and was discharged from the hospital Friday night. He is recovering at home, his spirits are good and his appetite is back to normal! I know we were home for the weekend but momma needed some R&R! We will be back and running tonight!!

AT LAST!

Simple Spaghetti


Chad started his new job today. We are really happy because he will be working a lot less hours, which means he will be home every night for dinner and no more weekends! YAY! It was nice having him walk through the door as I was finishing our spaghetti. Spaghetti is definitely a favorite in the Kelton house, we usually make pasta at least once a week. Jaxson is still sick but he is slowly getting better, it was nice to have him up and about at dinner time. Things are beginning to get back normal again. Tonight after dinner we enjoyed watching Madagascar 2 followed by Despicable Me.


The Recipe

Simple Spaghetti

1lb of ground beef, 1 jar of chunky tomatoes, 1 can of tomato sauce, 1 can of tomato paste, garlic salt. basil, and 1/4 cup of Parmesan cheese


Cook ground beef until no longer pink, season with garlic salt and pepper, drain. Stir in chunky tomatoes, tomato sauce, paste and 2-3 Tbs of basil, stir. Simmer for at least 1 hour. stir in Parmesan. Cook spaghetti noodles according to package. Mix sauce and noodles together and enjoy.

Dinner by Candlelight

This weekend was full of surprises and plan changers, so I am not sure why we thought tonight would be any different. Around 4pm a quick 15 minute storm swept through our area, knocking down trees and power to all. After a couple of hours of paitently waiting for the power to come back on we decided to eat. Not wanting to open our fridge or main freezer we decided to throw some corndogs on the grill, pan fry some potstickers, and cook some mac and cheese. (Thank Goodness for Gas). Not our ideal meal by any means but we all enjoyed it. It was really nice to sit around all those hours with nothing but eachother. Needless to say, No recipes tonight!

I want my baby back ribs

All I can say about today is Poor, Poor Jaxson! He is quiet sick with a nasty virus. Finally we got his fever under control around 8pm. Another day where we had big dinner plans that got changed so I could tend to my sick baby. The plus side to dinner is my awesome husband prepared and cooked everything! I have definitely been spoiled these past three days!


The Recipe

Terriaki Lime Ribs

Baby back pork ribs, terriaki marinade, lime and honey marinade, bbq dry rub (store bought)

Mix the terriaki and lime marinades then cover the ribs with it. Then apply dry rub all over the ribs, wrap in foil, bake @275 degrees for 3 hours. Let Rest for 15 mins. Super Tender!!


Glazed Carrots

1pkg baby carrots, 2 Tbs butter, 3-4 Tbs of brown sugar

boil carrots until tender, drain. Add butter and brown sugar mix well. Cook untill sugar melts

Summer Grillin

Grilled Brats, potato salad & grilled zucchini and squash


We strive really hard to have dinner every night as a family, occasionally life gets in the way and that doesn't always happen. Tonight we had planned a great backyard BBQ, where the kids could run around splash in the pool and sit around the fire pit roasting marshmallows after supper. Sounds awesome, right? Well unfortunately poor Jaxson came down with an ear infection today so our plans quickly changed. Jaxson was very irritable around supper time so I spent my evening cuddling with Jaxson till he fell asleep. For the second night in a row Chad prepared the entire meal, Yum!


The Recipe

Grill your choice of brats on a gas grill 15-20 minutes until cooked.


Grandma Mary's simple Potato Salad

6 peeled medium potatoes diced, 6 hard boiled eggs, 1 med. onion, and helmans mayo.

Boil the potatoes until cooked, about 15 minutes cool. cut up the eggs and onion. In a large bowl mix potatoes, onions, and eggs with 1/2 a cup of mayo mix evenly, adding more mayo if necessary. Salt and pepper to taste


Grilled Zucchini and Squash

Cut zucchini and squash in to 1/4 inch slices, drizzle olive oil over veggies and salt and pepper. Wrap in foil and throw on grill for 15-20 minutes until tender.

The Bruschetta Experiment

Well it is official Summer is definitely here, Upper 90's for the past few weeks with no break in sight!! What a Great Day!! Chad was home all day in fact he will be home thru Sunday and then it is off to his new job on Monday. We are all very excited for this new opportunity! The kids played all afternoon in their pool with friends and my sister. Afterwards I had to rush Kaylee off to cheer leading, while the boys stayed home and played. I was so happy to come home to Chad plating our dinner. We had a quiet evening around the table tonight as we were all exhausted from our day in the sun.


The Recipe

Mango, Tomato and Bacon Bruschetta

1/2 cup of mango salsa, pint of cherry tomatoes, 2-3 Tbs olive oil, 6 slices cooked bacon (chopped into bite size pieces), french bread, 1 cup of shredded Havarti cheese or any white cheese.


In a large pyrex bowl combine tomatoes, olive oil, and salsa. Salt and pepper to taste. Bake @ 350 degrees for about 15-20 minutes. Once it is done mash the tomatoes until your salsa is a chunky mixture. Cut the bread into 1 inch thick slices then bake the bread for 10-15 minutes till lightly toasted. Spoon the tomato mixture onto each slice of bread until covered. Top with bacon pieces then cheese. Bake for 10 minutes or until the cheese melts.


Fettuccine

Very simple dish. We just cooked fettuccine noodles according to box, tossed with leftover steak and classico four cheese alfredo sauce.
